A while ago I read about the microwave brownie in a mug, but then promptly forgot about it. Tonight, desperate for something other than toast or chocolate for dessert, it came back to me.

There are a lot of recipes out there, such as:

  • this one, which would be huge, and almost require a soup bowl
  • this one, which is very fancy pants

someone has even set up a tumblr blog on microwave brownies.

I went with this one largely because it was half the size, and it used vegetable oil – I couldn’t be bothered dealing with butter. It was almost 10pm after all.

So in the end it turned out pretty well. I decided to use my special bike mug, as it’s the largest one we’ve got.


We don’t have cooking salt, and a grind of the rock salt didn’t seem to break down too well – this wasn’t unpleasant, but I might almost leave out the cooking salt next time. I also cooked it for 1 minute and 30 seconds, and while I think it would have been fine if i’d eaten it quickly straight out of the microwave, I think it kept cooking as the mug was so hot, so by the time I’d finished it, it was pretty dry at the bottom – still tasty though.


I could also have obviously put a spoonful of icecream to cool it down and moisten it up, but didn’t feel like it.
